C.O. CAVA

The Cava Region is made up of a total of 159 municipalities that make up its production area. Most of them are located in Catalonia, where more than 99% of their production is made, highlighting the Penedés region as the main processing area (95%) and more specifically the town of Sant Sadurní d’Anoia, the main center producer (75%) and CAVA capital.

Elaboration

The CAVA is a quality sparkling wine produced in a specific region (v.e.c.p.r.d.) made by fermentation in the bottle according to the traditional method.

Authorized varieties:

White: Macabeo (preferred), Xarel-lo (preferred), Parellada (preferred), Subirat or Malvasía Riojana, Chardonnay

Inks: Garnacha, Monastrell, Pinot Noir (for rosé cavas), Trepat (for rosé cavas)
